How to Sharpen Your Bread Knives

A regular bread knife will have a serrated blade which is important for cutting soft bread without crushing it. However, most people do not know how to sharpen their bread knives. Some even damage them by using wrong tool and method. Here is how you can sharpen your bread knives like a true master.

Get Your Sharpening Tool

When it comes to sharpening your bread knives, you can opt forbasic sharpeningrod.While you have sharpening rods that are made of steel, ceramic or diamond coated steel, it is best to choose ceramic sharpening rod because it allows you to sharpen tooth for tooth.

You should first locate the side of your bread knife with abevelededge. Generally, serrated knives such as bread knives do not look the same from both sides. On one side, you will find the face of the blade will continue at the same angle until the blade's edge. As for the beveled edge, it is the face of the blade will angle down slightly just before the serrated edge. The beveled edgeis the part you should only apply a sharpening tool.

Place the Sharpening Rod in the Gullets

There is a simple trick when it comes to placing the sharpening rod in one of the serratedscallops (gullets). Choose an angle for serrated blades because you only need to use theangle of the bevel as a guide. The ideal angle is between 13 and 17 degrees compared to the edge of the blade; itis shallower than you may be used to sharpening knives.

If you find the knife with a straight edge portion, the bevels are usually ground to the same angle (20 – 25 degrees). In order to get a better guide, it is highly recommended to draw on the gullets with a permanent marker. After removing the marker, you will know you are hitting at the right angle. You have to move the sharpening rod to match the gullet's diameter. If your sharpening rod is tapered, you need to locate the rod in the gullet at the point where the diameter of the rod is the same size as the gullet or smaller.

Sharpen the Gullet

For the first gullet, simply run the sharpening rod along the first groove in several short strokes. You should push in one direction away from the edge of the blade and toward the spine. It is advisable to rotate the rod as you push it for a more even grind. In order to avoid enlarging the gullet, you should only pushto the point of the rod with the same diameter as the gullet.

Now, you can check for metal shaving or "burr". You can do this by running your fingers along the backside of the groove to check for aburr. Whenyou can feel a burr, this shows that you have sharpened the groove sufficiently. Most of the time, itonly takes a few strokes.

When your knife is only serrated along a part of the blade's length, you should sharpen the remaining length with a whetstone oranothersharpening tool (sharpeners). It is important that you must not use the serrated knife sharpener on the straight portion of the blade.
