Amateur home cooks and professional chefs should always find the time to clean out their cookware and utensils. Those who tend to cook a lot of dishes in their pots should especially pay attention to the care of the cookware. Cleaning the pots with dishwashing soap, a sponge, and water is sometimes not enough to eliminate tough residue.
Cooking pots are usually produced with materials like aluminum, stainless steel, cast iron, ceramic, and copper. Different materials require different maintenance so before you purchase them for your kitchen, do a research on what type of pot material requires less maintenance.
Stainless steel pots are often made from several types of metals. Pots that have a multi-ply label are of a higher quality because they have the features of several types of metals in one. Stainless steel pots are great for browning and searing and if it was made with aluminum, it can distribute heat evenly.
Ceramic, porcelain, and enamel are all coated stainless steel pots. They are considered as the highest quality of non-stick pots because it’s safe to use at high heat. Other coated stainless steel pots like Teflon are not suitable to be used in high heat and will not distribute it evenly.
Lastly, cast iron pots are heavy-duty, stick resistant, and can last for a long time. Using a cast iron pot while cooking can also affect the flavors of your food. Cast iron requires different maintenance and cleaning method including a step called “seasoning” which will be discussed in the next section.

Since stainless steel is a nonreactive metal, it will not react chemically with food and won’t alter their taste. Stainless steel pots do not corrode, easy to clean, and doesn’t easily scratch. You can shine your stainless steel pots using olive oil after wiping off any debris and tough grease.
Unlike stainless steel, copper will react chemically with foods. It does, however, conduct heat very well. Avoid cooking acidic food with copper pots because it can give the dish a metallic taste. Some dishwasher soap can discolor your copper pots so it’s best to wash them by hand. If you have a discolored copper pot, you can solve this by creating a paste of white vinegar and salt. Rub the paste thoroughly and rinse.
Cast iron pots need to be seasoned or coated with a layer of oil called the patina. Seasoning and curing cast iron pots will help prevent rusting, give the pot non-stick properties, and provide extra flavor to the food. Do not use soap or detergent to wash your cast iron pots. Clean it with a stiff brush and hot or boiling water. Dry it immediately and proceed to cover it with oil.
